Ice cream sandwiches. They’re the bomb. {Aside: do people still say “the bomb” anymore? Or did I just sound like a grandma who says things like, “That is one sharp co-ed. She is the bee’s knees, sure-as-shootin’!”?}
Anyways.
Ice cream sandwiches rock. As do pops {i.e., anything on a sick}. And mini things? Forget it, I’m in love.
Mix those all together, and what do you get? Mini ice cream sandwich pops. Throw some red, white and blue sprinkles on there and you have yourself the cutest, easiest little patriotic dessert you’ve ever seen.
This really couldn’t be easier. Seriously.
1. Unwrap your ice cream sandwich.
2. Trim off the ends and cut your sandwich in half to make two little squares.
3. Stick in your lollipop stick. {You can get these pretty much anywhere: craft stores like Michael’s or Hobby Lobby, Walmart, Joann Fabrics, etc. I’ve even seen them at Wegmans.}
5. Pour your sprinkles onto a plate, and press each side into the sprinkles.
6. Place them on a parchment-lined sheet tray and put them back in the freezer to harden up.
7. Eat.

So cute! We’re having a party after the 4th, but I’m still going to make these. As for “the bomb”… yeah, I catch myself saying it still. I’m not sure what hip lingo these youngins are using these days, but the bomb works for me. 😉
