Yup, you read that right.
There is Cap’n Crunch cereal in these cookies. And cream cheese. And they’re topped off with a chocolate heart.
*pfoof*
That’s the sound of minds being blown, people.
Cap’n Crunch is one of my favorite cereals ever. I got some all for myself for the boys last week, and as I was having some, I was trying to come up with a lengthy list of all the things I could possibly put them in. Naturally, the first thing that came to mind was cookies.
So I got to work.
And holy moly, these puppies are good.
The Cap’n Crunch gives them a nice, sweet flavor, and the cream cheese makes them amazingly soft.
See those little golden specks in there? Yeah, Cap’n Crunch.
The next time I make these, I probably would leave off the chocolate heart, but that’s just because I’m not a huge chocolate person. But for Valentine’s Day, I don’t think you can get much cuter.
Chocolate Heart Cap'n Crunch Cream Cheese Cookies
Ingredients
- 1/2 c {1 stick} unsalted butter softened
- 3 oz. cream cheese softened
- 1 c powdered sugar
- 1/2 tsp baking powder
- 1 egg
- 1 tsp vanilla bean paste {or vanilla extract}
- 1 1/2 c flour
- 1 1/2 c Cap'n Crunch cereal
- approximately 24 chocolate hearts unwrapped
Instructions
- 1. Preheat oven to 375 degrees. Place Cap'n Crunch is blender or food processor and process until fine. Set aside.
- 2. Cream together butter and cream cheese. Add powdered sugar and baking powder, and mix until thoroughly combined. Add egg and vanilla bean paste and beat until fluffy.
- 3. Gradually add in flour until thoroughly combined. Mix in Cap'n Crunch cereal crumbs. Cover and chill in refrigerator for 30 minutes.
- 4. Use small cookie scoop or drop by rounded tablespoonfuls onto baking sheet lined with parchment paper. Bake for 9-11 minutes. Remove from oven and let cool for 1 minute on baking sheet, then press one chocolate heart into the top of each cookie. Move cookies to wire cooling rack and let cool completely.
