Who doesn’t love Girl Scout Cookies?

I think those Girl Scout people are geniuses. I mean, you make some of the most delicious cookies ever, and then put them in the hands of some of the cutest little girls ever to sell them. Who can say no to that combination?

The worst part of Girl Scout Cookies is that you can’t get them all the time. Except now, the Girl Scout geniuses hooked up with the geniuses at NESTLÉ®  to create NESTLÉ® CRUNCH® Girl Scouts® Candy Bars.

I was walking through Walmart the other day and there they were in the Seasonal aisle, with a light shining down on them from the heavens and angels singing. {Not really. But it seemed like there should have been.} The thing is, like the cookies they’re based on, they aren’t available year-round either. I think that would be too much of a good thing. They’re only available until the end of summer! So go get some now!

Anyway, when I saw these candy bars, I knew I had to make something amazing with them. I thought about cookies, but then I realized that cookies made with candy bars that are based on and taste like cookies might just blow people’s minds.

And then it hit me.

Remember a few months ago when I made my Pretzel Toffee Marshmallow Treats? {If you missed those, you must try them ASAP. They are completely insane.} You may recall that they were inspired by the Ruffles Marshmallow Krispie Treats from Lauren’s Latest, which I promised I would be making at some point.

Well, guess what, people? That day has arrived. I present to you: Caramel Coconut Potato Chip Marshmallow Treats.

These are salty, sweet and amazing. And so, so easy to make.

You make them just like Rice Krispies Treats, so that means no turning your oven on in the dead of summer! Just crush up your potato chips, toast your coconut, chop up your candy bars, melt your butter and marshmallows together, and mix it all together.

That’s it. Well, then you have to try to not eat the whole batch. Because that wouldn’t be good. I mean, it would be delicious, but not good. You get me, right?

Caramel Coconut Potato Chip Marshmallow Treats
Sweet and salty squares made like rice krispies treats, but with potato chips instead of the cereal and studded with toasted coconut and chunks NESTLÉ® CRUNCH® Girl Scouts® Candy Bars.

Ingredients
  1. 3 Tbsp butter
  2. 1 10-oz bag marshmallows, {either 40 large or 4 cups miniature}
  3. 1 1/2 cups sweetened flaked coconut
  4. 6 cups crushed wavy/ridged potato chips {approximately one 10-oz bag}
  5. 8 mini {or 4 full-size} Caramel & Coconut NESTLÉ® CRUNCH® Girl Scouts® Candy Bars, chopped
  6. cooking spray
Instructions
  1. 1. Spray a 9x13 inch pan with cooking spray. Place crushed potato chips in large bowl.
  2. 2. Place coconut in a large skillet over medium heat. Cook, stirring frequently, until flakes are mostly golden brown. NOTE: Coconut can burn very easily, so keep an eye on it! Add coconut to crushed potato chips and stir to combine.
  3. 3. Melt butter in saucepan over low heat. Add marshmallows and stir until melted. Remove from heat.
  4. 4. Add potato chip/coconut mixture and stir until completely coated. Stir in candy bar pieces.
  5. 5. Press mixture into prepared pan and allow to cool. Once cooled, cut treats into squares and serve.
Notes
  1. Coconut can also be toasted in the oven: Preheat oven to 350 degrees F. Spread coconut in an even layer on a parchment-lined baking sheet. Bake, stirring every couple of minutes, for around 10 minutes, or until coconut begins to turn golden brown.
