Happy not-Monday, everyone! I know I usually post these on Monday, but this week is a little crazy because we’re getting ready to leave for 3 weeks on vacation. Packing 5 people for 3 weeks is seriously no joke. So you’ll notice me being a little more sporadic when it comes to posting over the next few weeks, and you’ll be seeing a bunch of guest posts from some of my sweet and amazing blogging friends.

Once again, we had an incredible Eat. Create. Party! this past Thursday. We had so many people sharing their fabulous recipes that I decided to feature some of my favorites!

Almond Joys are one of my top three favorite candy bars. I seriously love them — and anything that has that coconut-chocolate-almond flavor combo. So when I saw these Coconut Almond Macaroons from Layers of Happiness, I may or may not have done a happy dance. {Hint: I did.}

 

2I know that sometimes I do a theme to these favorites posts, and you may think I’ve got a coconut thing going on here, but I don’t. I just couldn’t resist this Blueberry Coffee Cake with Coconut Streusel from Lemons for Lulu. It looks like dessert, but it’s acceptable to eat this for breakfast. Um, ok!!

 

3Macaroni and Cheese Pie. Seriously. Macaroni and cheese baked in a pie crust. Holy lord. I think Parrish from Life with the Crust Cut Off might be my new hero.

 

4Could these Beach Ball Sugar Cookies from This Silly Girl’s Life be any cuter?? I mean, seriously. I love the colors, and they just scream “summer” and “the beach” to me. Love them.

 

5These Blueberry Sour Cream Pancakes with Fresh Blueberry Syrup are absolutely gorgeous. Who wouldn’t want to wake up to a breakfast like this? I don’t think it would be possible to have a bad day if you had these first thing in the morning. Just sayin’.

 

6I am all about no-bake desserts in the summer. Any time I can make a delicious treat without turning on my oven, I’m a happy camper. So I was so excited to see this gorgeous Easy & Creamy Peach Cheesecake from Love Bakes Good Cakes. Totally going in my no-bake repertoire.

 

7Here’s another looks-like-dessert-but-could-be-breakfast treat! Plus, this Triple Berry Banana Bread is pretty and patriotic too! What a fun way to start your 4th of July! 

 

8Finally, popsicles for breakfast. Seriously: Popsicles. For. Breakfast. I think I am going to have to make these Blueberry Breakfast Parfait Pops from Mom on Timeout for my kids while we’re at the beach. They will think I am the coolest mom ever.
