Tuna Cakes

Now that school is back in session and baseball and soccer are starting back up, we have activities almost every night, so I don’t have a ton of time to spend planning for and making dinner. I am desperate to find some quick, easy and delicious weeknight meals so tha tI don’t fall into the fast-food or takeout trap.

One of my favorite go-to weeknight meals is tuna cakes. Not like cake cake {because, ewww}, but like a crab cake, just made with tuna instead of crab.

They are downright delicious. And really, really easy to make. If you want to, you can even make the patties in advance and have them ready to go in the fridge. Then, when it’s time to start cooking, you can just toss them in a pan and have dinner on the table in minutes.

To start, grab yourself a couple of pouches of Bumble Bee® Premium Light Tuna in Water or Premium Albacore Tuna in Water. You can also use the canned Bumble Bee® tuna, but I really prefer the pouches. There’s no need to drain them, so there’s one fewer step in the process, and you won’t need to worry about your tuna cakes being soggy if you don’t drain the tuna properly.

Toss in some mayo, bread crumbs and spices, and you have yourself a quick, easy and delicious weeknight meal that the whole family will love.

My kids house these things. Even Mason, who isn’t exactly a picky eater, he’s more of a pain-in-the-neck eater. Do you have one of those in your house? A kid who will not eat for two or three days, and then eat like he’s been stranded on a desert island for several years? Or who will act like a certain food is the most delicious thing he’s ever eaten one day, and then the next time you give him that same thing, he acts like you’re trying to poison him? Yeah, he’s one of those. But he ate a whole tuna cake himself and then asked for seconds.

Ingredients
  1. 1 egg, slightly beaten
  2. 1/3 cup mayonnaise
  3. 2 pouches {5 oz. each} Bumble Bee® Premium Light Tuna in Water
  4. 1/2 c panko bread crumbs
  5. 1 Tbsp seafood seasoning {I used Old Bay}
  6. 1 Tbsp canola oil
Instructions
  1. 1. In a medium bowl, mix together egg and mayonnaise until well blended. Add in tuna, panko bread crumbs and seafood seasoning and fold to combine thoroughly. Form tuna mixture into 4 patties.
  2. 2. Heat canola oil in a large cast-iron or nonstick skillet over medium heat. Place patties in pan and cook for 4-5 minutes on each side, or until golden brown.
Notes
  1. Note: If you'd like to make the tuna mixture ahead of time, place tuna mixture or uncooked patties into the refrigerator for up to 24 hours. Then, cook as instructed.

    What is the sauce that is on top of these tuna paties?

      Hi Kathy! It is Old Bay Mayonnaise — just mix about 1-2 tablespoons of Old Bay Seasoning into about 1 cup of mayonnaise. Thanks! 🙂
