Ghost Pancake Pops {31 Days of Halloween: Day 6}

Welcome to Day 6 of the 31 Days of Halloween!

Did you know that there’s a whole thing out there called pancake art? Seriously, it’s pretty much ridiculous.

I mean, honestly. Those are pancakes. For reals.

I probably shouldn’t have shown you that, because now I’m going to show you my what-I-think-are-super-cute ghost pancake pops, and you’re going to be all, “Oh, how sweet. Did your 3-year-old make those?”

Whatever, I think they’re cute.

And so did my kids. They went a little crazy for them, and Connor actually said, “Oh my gosh, I think these are the cutest things I’ve ever seen! They’re almost too cute to eat!”

They’re also insanely easy to make. And pretty much anything is more fun on a stick, right? Right.

I used boxed pancake mix, and just prepared the batter according to the directions. Then I poured all but about 1/4 cup of the batter into a squeeze bottle. I added some black food coloring to the remaining 1/4 cup of batter, mixed it thoroughly and put it in another squeeze bottle.

Then I squeezed out a couple of sets of eyes onto a pan that’s been heated over low heat. {Please excuse these in-progress photos, I have absolutely no natural light over my stove.}

Then, I just squeezed out some of the regular batter into a little ghost shape, covering up the eyes {later, I started adding mouths too, which I think made them way cuter}. I then immediately added a lollipop stick.

Once they were set, I flipped them over to finish cooking on the other side and admired their cute little faces!

I served them with a little bowl of syrup for dipping, and like I said, my kids went nuts over them.

Just be sure to let them cool a bit before serving, because those lollipop sticks get HOT!

These would be super cute as pumpkins or Frankensteins too!
