S’mores Cookies {& Graham Cracker Houses!}

I love coming up with new holiday recipes {or any recipes, for that matter}. Because during the holidays, calories don’t count. Well, maybe they count a little bit, but really, they don’t. All bets are off for me from Thanksgiving through New Year’s. I sort of try to be good with most meals, so when I hit the dessert table, I can go to town.

I’ve been tossing around the idea of s’mores cookies for a while now {because graham crackers are awesome and baking with graham crackers is even better}, so I figured, why not during the holidays?? S’mores are not just for the summer, people.

So I decided to experiment. I headed off to Walmart to get some Honey Maid Grahams, and I knocked it out of the park on my first try.

These cookies are chewy, gooey and crazy delicious. My husband actually said that they were the best thing I’ve ever made, which is huge.

I substituted some of the flour with graham cracker crumbs, so the whole cookie has a sweet, graham cracker-y flavor. And chocolate chips are for chumps, so I folded in some chopped milk chocolate chunks instead. {Disclaimer: chocolate chips are not actually for chumps. I in fact love chocolate chips and use them quite often. I just wanted to get all fancy-pants up in here.}

But the most amazing part of the entire cookie would be the big honkin’ toasted marshmallow right on top.

Oooohhhh… heck yes.

I had originally thought I’d make some type of marshmallow frosting, but then I figured I’d see what happened if I just slapped a marshmallow right on top of the cookie before baking it. You know what happened? Heaven happened, that’s what happened.

Seriously, these cookies are insane. And they make me laugh because they look a little bit like fried eggs.

Ingredients
  1. 1 stick butter, softened
  2. 1 c brown sugar
  3. 2 tsp vanilla bean paste {or vanilla extract}
  4. 1 egg
  5. 1 1/4 c Honey Maid graham cracker crumbs
  6. 1 c flour
  7. 1/2 tsp baking soda
  8. 1/4 tsp salt
  9. 1 1/4 c chopped milk chocolate {or chocolate chips}
  10. approx. 15 large marshmallows, cut in half
Instructions
  1. 1. Preheat oven to 375 degrees. Mix together butter and sugar together until creamy. Add vanilla and egg and mix until well combined.
  2. 2. In a medium bowl, stir together graham cracker crumbs, flour, baking soda and salt. Add, a bit at a time, to the butter mixture until combined. Fold in the chocolate chunks.
  3. 3. Using a cookie scoop or a tablespoon, drop dough about 2" apart onto parchment lined baking sheets. Flatten dough ball slightly with your hand and place a marshmallow half on top.
  4. 4. Bake for 8-10 minutes, or until marshmallow is lightly browned.

But then, here’s the thing. I bought a couple of boxes of Honey Maid graham crackers, expecting to have to make several batches of cookies before I landed on the perfect recipe, so I had all these crackers left over. It’s not like they would have gone to waste, because my kids love themselves some Honey Maids, but we needed an activity on a day that school was dismissed early because of snow and ice.

And what better to occupy them than some graham crackers and candy??

These graham cracker houses ended up being so much fun. I whipped up some royal icing and assembled a house for each of the boys.

To cut the gabled ends of the house, just use a serrated knife and a sawing motion to gently cut the graham cracker. It’s probably a good idea to have a few extras on hand in case of breakage, but you could also just use some royal icing to glue it back together if it does break. Use your icing to glue it all together.

Then I just set out a bunch of candy and chocolate chips {see? not for chumps at all} and let them go to town. It was so much fun.

They absolutely loved doing it, and it was cool to see what ideas they had.

Just look at that concentration. My kids are laser-focused when it comes to pretty much anything edible.

They were so proud of their creations!

When they were all done, we took a couple of cardboard cake bases and covered them with foil.

We glued each of the houses to the base and made a cute little graham cracker house neighborhood.

We stuck some little marshmallow snowmen and Christmas trees in the yards, sprinkled on a little powdered sugar snow, and our little graham cracker village was complete.
