I have a confession to make. 

I absolutely, positively, love Cool-Whip. Like, would eat it by itself with a spoon as my dessert {or dinner}, love it. I am not ashamed.

This Raspberry Whipped Cream is amazing -- and it's made with only 3 ingredients! This would be so delicious on pretty much anything -- but especially chocolate!!

But as much as I love the fake stuff, there is something about real whipped cream. It’s so light and fluffy and airy and perfect — yum, yum, yum.

It’s one of those things that can take your dessert to a whole new level {also known as: fancy-pants town}, but it’s super easy to make. I feel like people get intimidated by it, but my friend Rebecca shared some easy tricks to making perfect whipped cream, and if you follow those, you pretty much cannot mess it up.

Because we’re coming up on Valentine’s Day, I thought I’d give mine a little pinkish-red twist: raspberries.

This gorgeous, pillowy, pale pink perfection is made with just 3 ingredients: heavy whipping cream, raspberries and powdered sugar. And it takes less than 10 minutes to make, so you can whip it up {heh, heh… get it?} in no time. It would be simply amazing on some gooey, fudgy brownies. Or just with a spoon. You know, whatever floats your boat.

Ingredients
  1. 1 cup fresh raspberries {see notes}
  2. 1 cup heavy whipping cream
  3. 3-4 Tbsp powdered sugar {amount depends on sweetness of berries}
Instructions
  1. 1. Chill bowl and beaters {whisk attachment, if possible} in the freezer for 10-15 minutes until ready to use.
  2. 2. Place the raspberries and 1/4 cup of the heavy whipping cream in chilled mixing bowl. Beat on low speed for 1 minute and then increase speed to medium for another 1-2 minutes until raspberries are completely mashed up.
  3. 3. Strain mixture through a fine mesh sieve, using a spatula to press mixture all the way through, and discard seeds and pulp. Pour raspberry cream back into mixing bowl.
  4. 4. Add remaining whipping cream and beat on low for 1-2 minutes, or until the mixture begins getting foamy. Add in powdered sugar and increase speed to medium/high. Beat for an additional 2-3 minutes until soft peaks form.
Notes
  1. You could substitute frozen berries if desired, just be sure to thaw and strain the berries before adding them to the cream.
