I say this all the time, but it’s 100% true: I am lazy. Like, crazy town lazy. Like, the other night, I was sitting and watching TV, and I realized that the remote was across the room. Rather than just get up and get it, I tried for a solid 10 minutes to teach Fletcher to go and fetch it for me. {He didn’t catch on, stupid useless dog…} When I see articles with headlines that include the words “easy” or “cheat” or “hack”, I light up a little inside.

The moral of the story is: if I can find a way to do something in an easier way, then I am all over it.

But I also love desserts. Especially pies. Pies are my jam. But pies are a pain in the neck to make, even when you use refrigerated pie dough {which I do, because: lazy}. Even pumpkin pies, which are pretty much the easiest thing ever, require measuring and mixing and baking and waiting — I especially hate the waiting part, because in addition to being lazy, I am also incredibly impatient. So that’s a fun combination.

But these Mini Pumpkin Pecan Snickerdoodle Pies are just about perfect. Because they are practically effortless and take less than 5 minutes to make. I’m pretty sure it takes longer to type out “Mini Pumpkin Pecan Snickerdoodle Pies” than it does to actually make them.

I mean, honestly. You could serve these at a dinner party and everyone would be all impressed, and no one would know it took you approximately 92 seconds to make dessert.

Just stir some cinnamon sugar into the yogurt and spoon it into the pie crusts. Sprinkle on some chopped candied pecans {don’t bother making those yourself — just grab a bag of them at Walmart like I did when I was getting everything else}, and top with a dollop of Reddi-wip.

The boys went completely bananas over these mini pies and asked if they could make them themselves the next time. Uh, yeah they can. They’re so easy, I think Fletcher could probably make them {although who knows, considering how worthless he was with the whole remote-fetching operation}. And I like that, thanks to the Dannon Light & Fit Greek Yogurt, they’re a healthier dessert option than a lot of things out there.

Ingredients
  1. 3 tubs Dannon Light & Fit Pumpkin Pie Greek Yogurt
  2. 1 Tbsp sugar
  3. 1/2 tsp cinnamon
  4. 1/8 tsp cream of tartar {optional}
  5. 6 mini graham cracker crusts
  6. 1/2 cup chopped candied pecans
  7. Reddi-wip
Instructions
  1. 1. Place yogurt in a bowl with sugar, cinnamon and cream of tartar {if using} and stir until combined and completely smooth. Divide into graham cracker crusts. Top with candied pecans and a dollop of Reddi-wip

    candied pecan recipe???

      Hi Bobbie! Like I said in the post, I didn’t make the candied pecans. I used store-bought ones. I’m sure if you did a search, you could find a candied pecan recipe online.
