When I was little, every so often we would have breakfast for dinner. My mom would make omelettes, or pancakes, or my favorite: crepes. I always thought it was so fancy and such a treat, but now that I’m a mom, I’m pretty sure it was because we didn’t have any other food in the house and breakfasts are generally just easy to make. {Well, except for the crepes. Those take forever to make.}

But regardless of the reason, those breakfast-for-dinners have given me a life-long love of breakfast food. I could eat breakfast at any time of the day, and I love making fancy breakfasts for my kids. And one of the things I especially love to make is waffles.

I think some people are intimidated by waffles, but they are actually one of the easier breakfast foods to make. Sure, you need a waffle iron, but they’re super inexpensive {I think I got mine for about $25 on sale}, and you don’t even need to make them from scratch. By adding in a few extra ingredients, you can make store-bought pancake mix into some of the best waffles you’ve ever tasted, like these Sweet Cream Waffles.

One of the easiest ways to jazz up waffles is with flavored milks or coffee creamers. So imagine my giddiness when I was at Walmart the other day and discovered 1/2 gallon, easy-to-hold, easy-to-pour bottles of International Delight® coffee creamers. And imagine how I just about passed out when I saw that one of them was International Delight® Cold Stone Creamery™ Sweet Cream flavor. {It also comes in French Vanilla and Caramel Macchiato flavors!}

I mean, seriously? Sign me up.

All I did to make these was make a waffle batter like instructed on the pancake mix box, but instead of using milk, I used the Sweet Cream creamer.

I honestly could not believe how good these waffles are. The creamer gives it a nice hint of sweetness without being too overpowering. 

I am actually not that huge a fan of coffee, but that is mostly because I don’t like the taste of plain coffee. But caramel macchiatos are my jam. If we ever go to a coffee shop, you can bet that’s what I’m getting.

So when I saw the International Delight® Caramel Macchiato sitting right there next to the Cold Stone Creamery™ Sweet Cream flavor, I decided to give it a try. And holy moly, am I glad I did. I might actually start drinking coffee on a regular basis now. It is so. darn. good.

And a sweet little caramel macchiato goes just about perfectly with these pancakes.

If you want to get SUPER fancy up in here, you can drizzle some creme anglaise over your waffles.

Melted vanilla bean ice cream.

What the whaaaaaa?!?!?

Seriously. Grab yourself a scoop or two of vanilla bean ice cream and either let it melt on its own while you’re making the waffles or pop it into the microwave for a few seconds. Drizzle that on top of your waffles and your family with think you’re all sorts of high-falutin’. But you’ll know the truth, and you don’t have to share your secret if you don’t want to.

Ingredients
  1. Boxed pancake/waffle mix, plus other ingredients as directed {except for milk}
  2. International Delight® Cold Stone Creamery™ Sweet Cream flavor {replace the amount of milk called for on box}
  3. 1-2 cups melted vanilla bean ice cream, optional
Instructions
  1. 1. Prepare waffle batter according to directions on box, substituting milk for International Delight® Cold Stone Creamery™ Sweet Cream flavor. Cook waffles according to directions for your waffle maker.
  2. 2. If desired, top with melted vanilla bean ice cream. Serve immediately.
