Vampire Pie Bites

It’s no secret that I love easy and cute treats. And if I can use a shortcut or store-bought ingredient to make those treats even easier, then: jackpot. 

I saw these Kiss from a Vampire Cookies in Taste of Home magazine, and I absolutely loved them, but then they seemed like a whole lot of work. So I sat down to figure out how I could do them in a much easier way, and it hit me: pie crust.

I am not ashamed to say I use refrigerated pie crust pretty much all the time. I cannot make a pie crust to save my life, and I can’t figure out why not. I ends up being just awful: no flavor, crumbly… basically just a hot mess. So I am proudly and fully aboard the refrigerated pie crust train.

And for little cookies like this, it’s a crazy town time saver. These take about 10 minutes to put together and another 15 minutes to bake, so they’re super quick and easy.

They’re filled with strawberry or raspberry jam, and by just poking a couple of little holes in the top, you can make them into spooky, fun little vampire pie bites. {See what I did there?? BITES?? I know, right?? Hilarious.}

I mean, seriously, how cute can you get??

Aside from being time-consuming and requiring a rolling pin, the other issue I had with the Taste of Home recipe is that the comments pretty much all said that the jam doesn’t ooze out of the holes. I had a similar issue with these pie bites, but all I did to fix it was to paint on little drips of jam after they cooled down.

Problem solved.

The boys went bananas over these. They thought it was so cool that they were eating “blood”. Connor said, “Whoa, who’d have thought blood tastes so good?!?” 

Yeah, disturbing.

But the point is, these are easy to make and delicious and creepy and kind of gross but really cool. 

And for a fun Halloween treat, that’s pretty much all you can ask for, right??
