Between my 3 boys this spring, we have 6 different activities. Seriously. Six. Trying to coordinate everyone’s schedules is pretty much just insane. Especially when Dave is out of town. Let’s just say the phrase “it takes a village” has never rung more true, and I’ve never been more grateful for helpful friends and neighbors who are willing to schlep my kids to and from practice on days when I’m supposed to be in 3 places at once. 

The other thing that becomes challenging is dinners. Lacrosse and baseball both are from around 5:00ish to 7:00 or 7:30ish, so dinners need to either be at 4:30 or 8:00. I’ve been doing a lot of slow cooker meals that can just be ready whenever someone needs to eat, but I also love to have some super quick and easy recipes on hand for those nights when I don’t even have my act together enough to get the slow cooker ready. {It happens more than I’d care to admit.}

They are naturally tender and juicy and don’t have added steroids, hormones or any artificial ingredients, and they’re made in the USA. And they’re readily available at Walmart, which is always a plus since I’m constantly there stocking up on various stuff.

If it’s not quite grilling season where you live, you don’t have a grill, or if you just don’t feel like firing yours up, no big deal. You can always use a grill pan, which is what I did for these.

The key to boneless pork chops is to not overcook them. You only need to go around 4-6 minutes per side, depending on the size, but worry more about the temperature than the time. Pork should be cooked to a temperature of 140° Fahrenheit. 

Once your chops register 140° — just insert your meat thermometer into the thickest part of the chop to check the temp — remove them from the grill, place them on a platter and tent them with foil to keep them warm while you make your sauce.

For the sauce, just sauté some garlic in olive oil and butter and add in some broth, both Dijon and whole grain mustard, and — because I wanted to lighted this dish up a bit and keep it on the healthy side — evaporated 2% milk!

Most cream sauce recipes you find will call for heavy cream, but evaporated milk is actually a surprisingly great substitute. And if you’re dairy free, you could always used unsweetened almond milk instead. 

Pour your sauce over your pork, and serve it up with some veggies for a delicious, easy to make, healthy dinner that can be whipped up in almost no time at all.

Such a perfect dish for one of those nights when you have no time to spend in the kitchen. And if for some crazy reason you have some leftovers {we rarely do, my kids love this so much!}, they make a fabulous sandwich for lunch the next day: chop up the pork, mix it with the leftover sauce and a tablespoon or so of mayonnaise. So delicious!

Grilled boneless pork chops smothered in a healthy honey mustard cream sauce. A perfect quick and delicious weeknight dinner!

  1. 4 Smithfield all natural boneless pork chops
  2. salt and pepper to taste
  3. 1/2 Tbsp olive oil
  4. 1/2 Tbsp butter
  5. 2 cloves garlic, minced
  6. 3/4 cup chicken broth
  7. 1 1/2 Tbsp Dijon mustard
  8. 1 1/2 Tbsp whole grain mustard
  9. 2 Tbsp honey
  10. 1/2 cup evaporated 2% milk
  1. 1. Preheat grill or grill pan. Season pork chops lightly with salt and pepper and grill for 4-5 minutes per side, or until a meat thermometer inserted into the thickest part of the chop registers 140 degrees F. Remove from grill and tent with aluminum foil to keep warm until sauce is done.
  2. 2. Meanwhile, heat olive oil and butter over medium heat until butter is melted. Saute the garlic until tender and then add in chicken broth. Simmer for 4-5 minutes or until broth is reduced by about half. Whisk in mustards, honey and evaporated milk and simmer, whisking frequently, for another 2-3 minutes or until sauce thickens.
