I am bringing you something a little different today: something healthy!
I know, it’s shocking. You all know how much I love my chips and dip, cookie dough, ice cream, and other various sweet treats, but I clearly need a change in this almost-40-year-old body.
This winter made me so ridiculously lazy and hungry — I hardly worked out at all, and I can’t even think about what I was eating, because I will embarrass myself.
So when a friend posted something about doing the 21 Day Fix, I decided to try it out.
I’m on Day 4 now, and I feel great. Well, other than the fact that I can’t move because I’m so $#%^@#^ing sore, I feel great. I’m eating healthier than I have in… well… ever, and I’m working out at home and enjoying the workouts. {Mostly. I have said some rather nasty words to Autumn during the workouts. She can be a beyotch.}
But I am having all kinds of fun finding new recipes to try that are approved by the program. Last night I made chicken enchiladas that were so good, Dave and the boys loved them too, and Dave said we need to add it to our rotation of regular dinners, even when I’m not doing the fix. Delicious.
For lunch yesterday, I made a 21 Day Fix-approved version of one of my favorite Rachael Ray recipes, Spitfire Shrimp. I love shrimp so much, and while her version is pretty healthy as-is, there are a few things {such as the butter and olive oil} that make it not-so-great.
I served it on a bed of mixed greens and drizzled the remaining seasoning over the top. It was so good. Super duper spicy, but so very good.
While I promise whole heartedly not to turn Endlessly Inspired into a fitness blog, I will be sharing my progress throughout the next couple of weeks. Because I know most of us probably have a few pounds we wouldn’t mind getting rid of, and I know I love hearing about how other people lost weight and got in shape.
Spitfire Shrimp - 21 Day Fix Approved
Ingredients
For the seasoning
- Juice from 1/2 lime
- 1 1/2 Tbsp hot sauce
- 1/2 Tbsp ground cumin
- 1/2 Tbsp Old Bay seasoning
For the shrimp
- 1 tsp extra virgin olive oil
- 1 tsp minced garlic
- 6-8 large shrimp {see notes}
- 1 cup mixed greens
- 1 scallion sliced thinly
Instructions
- 1. Heat olive oil in a small nonstick skillet over medium-high heat.
- 2. In a medium bowl, mix together lime juice, hot sauce, cumin, and Old Bay.
- 3. Saute garlic for about 1 minute, then add shrimp and cook for approximately 3 minutes, turning about halfway through, until opaque and pink. Immediately dump shrimp into seasoning blend and toss to thoroughly coat. Serve over mixed greens and garnish with scallion.
Notes
21 Day Fix count: On their own, the shrimp are 1 1/2 red and 1 teaspoon. Mixed greens would add 1 green. Adapted from Spitfire Shrimp by Rachael Ray
