We are huge Food Network fans in this house. Even the boys are into it — especially David. Which is why it was the coolest thing EV-ER when we got to do this a few weeks ago.
Yeah, we’re at the Chopped judges’ desk. And one of those Diet Cokes? Yeah, it’s Alex Guarnaschelli’s.

Oh, and David got to do this.

We also got to meet Geoffrey Zakarian {who is super dreamy, btw}, and eat some food that was cooked in the Food Network Kitchens.
Coolest. Day. Ever.
But anyway, one of our favorite Food Network shows is The Kitchen. We watch it a lot of times on Saturday mornings to see what we’ll be making for dinner on Sunday.
And on one episode, Sunny Anderson made brownies in a waffle maker.
Who knew you could even do that?? Not me, but I will tell you something: my world is a happier place now that I have this knowledge. Even better, you use a boxed brownie mix. Yay for shortcuts!
So Dave decided he was going to have to try to make them, but we didn’t have any brownie mix. You know what we did have? Pound cake mix. So he made pound cake waffles. Holy moly.
Of course because I have to always take things to another level, I thought: “Ooh, those would make an insane ice cream sandwich!!” So I decided to try them with some sliced strawberries and vanilla ice cream, thinking they’d be like a little frozen strawberry shortcake.
They were so very delicious. And super duper easy. You just mix up the batter according to the package directions and cook it in your waffle maker like you would regular waffle batter. HOWEVER {and this is very important!!}: do not overfill your waffle maker. This pound cake batter rises like nothing you’ve ever seen in your life, and if you’re not careful, you will have the world’s most horrifying eruption of cake batter out of the sides of your waffle maker. Not that I know this from experience or anything.
Ahem.
Anyhow, you just make your waffles, let ‘em cool, slap some ice cream and sliced strawberries on there, let ‘em freeze back up, and go nuts. They are absolutely dee-licious. And such a great summertime treat!
Strawberry Shortcake Waffle Ice Cream Sandwiches
Ingredients
- 1 box pound cake mix batter prepared according to package directions
- 1 pint strawberries sliced
- 1/2 gallon vanilla bean ice cream slightly softened
Instructions
- 1. Pour a small amount of batter into your preheated waffle maker {DO NOT use too much batter or it will pour out the sides!}. Cook according to waffle maker’s directions. Repeat with remaining batter, and let waffles cool completely.
- 2. To assemble ice cream sandwiches, spread a scoop of ice cream on a waffle and top with sliced strawberries. Spread 1-2 tablespoons of ice cream on another waffle and place on top of strawberries. Wrap in plastic wrap and place in freezer until hardened. Repeat with remaining waffles, ice cream and strawberries.
- 3. Before eating, remove from freezer and allow to stand at room temperature for 10-15 minutes to soften slightly.
