Rainbows.
I don’t know if it’s just because I’m girly, or because I grew up in the 80s, but I absolutely love rainbows. And I always have. When I was little, we lived in Erie, so we would go to Niagara Falls a lot, and there was a store in a mall on the U.S. side that was entirely rainbows. Literally, everything in the store had a rainbow on it. I thought I had died and gone to heaven every time we stepped into the place.
I also grew up in a house that had a giant rainbow painted across the kitchen cupboards. {What can I say, my parents were a tad on the hippyish side…}
So I guess it’s no surprise that I love rainbows as much as I do. I mean, they’re just so darn HAPPY.
But I have 3 boys. So you know what I get a lot of in this house? Basketball. And baseball. And football and soccer and hockey and lacrosse and volleyball. And monster trucks. You know what I don’t get a lot of?
Rainbows.
But St. Patrick’s Day is a fun excuse for me to get my rainbow on without my boys getting all “Eww! That’s girly!!” on me.
And this year, I decided to share 20 awesome, amazing, easy-to-make rainbow treats with you.
