You know how everyone has their anti-stress thing? You know, the one thing they do when they’re all discombobulated that helps them chill out? For some people, it’s cleaning {there’s actually a technical term for those people. They are called “lunatics.”}, for others it’s running or some other type of exercise {again, crazy people}. For me, it’s baking. I think it’s because I grew up baking with my grandma and my mom, and some of my happiest memories involve me being in the kitchen with one of them. And one of my favorite kinds of cookies that we’d make together was snickerdoodles. I have only ever made the basic snickerdoodle recipe, and never really thought about changing it up at all until I spotted this recipe for White Chocolate Pumpkin Spice Snickerdoodles at Lil’ Luna. {Aside: If you don’t follow Lil’ Luna, you need to. Her blog is awesome. That is all.} Anyway. That one post opened up a world of possibilities for me. I started brainstorming what other flavors would work with the cinnamon-sugary yumminess of snickerdoodles, and then it hit me. Apple. Pie. Snickerdoodles. Oh hellz yes. They are so, so delicious. I had to send a bunch over to my in-laws so that I didn’t eat the whole darn batch myself. These are perfect cookies to add to your Thanksgiving menu — and they’re WAY easier than actually making a pie! Apple Pie Snickerdoodles use a basic snickerdoodle recipe, just with a few tweaks. I added pumpkin pie spice into the dough and the cinnamon sugar mixture the cookies are rolled in before baking, and I folded in some chopped dried apples as well. Apple Pie Snickerdoodles
Ingredients
- 1/2 cup butter flavored shortening
- 1/2 cup butter - softened
- 1 1/2 cups sugar
- 2 eggs
- 1 T vanilla
- 2 t cream of tartar
- 2 3/4 cup flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 t pumpkin pie spice
- 1 cup chopped dried apples
- 3 T sugar
- 1 1/2 t cinnamon
- 1 1/2 t pumpkin pie spice
Instructions
- 1. Preheat oven to 400 degrees. Cream together shortening, butter and sugar. Add eggs and vanilla and blend thoroughly.
- 2. In a separate bowl, sift together cream of tartar, flour, baking soda, salt and pumpkin pie spice. Gradually add to wet ingredients until well combined. Add in dried apples and mix thoroughly.
- 3. In a small bowl, mix together sugar, cinnamon and pumpkin pie spice. Form dough into 1" balls and roll in sugar mixture.
- 4. Place 2" apart on baking sheets lined with parchment paper. Bake for 8-10 minutes.
