When it comes to alcohol, sparkling wine is my jam. Aside from the straight-up deliciousness of it, there is something about a glass full of bubbles that makes even an impromptu happy hour on the deck seem like a special occasion. I love drinking it just by the glass, but what I love even more is drinking it in a cocktail. If we’re out at a restaurant, and there’s a cocktail with sparkling wine in it, I am all over it.
During the holidays, Dave and I have so much fun experimenting with new sparkling wine recipes — one of my favorites up until now has been Prosecco and cranberry-pomegranate juice garnished with pomegranate seeds.
I say “up until now” because I have a new fave: this Caramel Apple Sparkler.
Holy. Moly. It is completely absurdly delicious, people.
Apple cider, caramel vodka and my new favorite sparkling wine, Riondo Prosecco.
An Italian sparkling wine {fun fact: like Champagne, the name Prosecco refers to a specific grape and region in Italy — in this case, glera grapes grown in the northeast Veneto region. Who knew?!?}, Riondo Prosecco is delicious and affordable, so it’s great to have on hand for holiday get-togethers or just for relaxing after a long day of baking {or, you know, while you’re baking. You do you, I won’t judge}.
But, anyway. Back to the drink.
It really couldn’t be easier. Just mix about 1 ounce each of caramel vodka and apple cider, and top off the glass with Prosecco.
If you want to get all kinds of fancy, you could rim the glass with cinnamon sugar and an apple slice, but again, I won’t judge if you can’t be bothered.
If you’re willing to share, you can also make this for a group. Just mix the apple cider and caramel vodka in a pitcher {about a cup of each, this time} and then top it off with the entire bottle of Riondo Prosecco.
I really can’t think of a better fall drink. This would be so perfect for Thanksgiving brunch or, you know, Wednesday morning. Whichever.
