Chex Mix. It makes me happy.
You know who else loves Chex Mix?

In fact, he doesn’t quite get the distinction between Chex, as in the cereal you eat for breakfast, and Chex Mix, which can lead to some super enjoyable mornings in our house.
For the luau a couple of weeks ago, I made an Aloha Chex Mix.
I have made a ton of different types of Chex Mix, but this was the first time I made up my own recipe. {Although I did base it loosely on this one.}
It’s super easy, but I did mess it up a bit as I was making it. {Blogging Fail alert!! The lemon buddies recipe called for lemon juice and lemon zest, so I decided to add pineapple juice instead. But then it didn’t taste pineapple-y enough, so I added a bit more. Which ended up making the cereal soggy and it tasted like it had been left outside on a humid day. And it still didn’t taste very pineapple-y, so I bagged the juice altogether.} I have adjusted the recipe here to account for my mistake.
Aloha Chex Mix
Ingredients
- 9 cups Chex cereal {I used a combination of Corn and Rice but you could use whatever you like}
- 1 1/4 cups vanilla baking chips
- 1/4 cup butter
- 2 cups powdered sugar
- 1 1/2 cups coconut
- 6.5 oz jar macadamia nuts chopped
- 6 oz bag dried pineapple chunks chopped {I used Sunsweet}
Instructions
- 1. Measure cereal into a large bowl, set aside.
- 2. In microwaveable bowl or measuring cup, microwave chips and butter uncovered on high for 1 minute and stir. Microwave about 30 seconds more or until mixture can be stirred smooth. Pour mixture over cereal and stir until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
- 3. Add powdered sugar and coconut to bag. Seal bag; gently shake until well coated. Add macadamia nuts and pineapple chunks, shake to mix. Spread on waxed paper or foil to cool.
