I used to not like hummus at all. I’m not a huge fan of beans {it’s more of a texture thing than a taste thing for me — they’re kinda gritty, and they sorta skeeve me out a bit}, and since hummus is made from garbanzo beans, I pretty much told myself that I wasn’t going to like it.
So I didn’t. {I wish my kids listened to me as well as I listen to myself.}
But then I started finding all of these different kinds of flavored hummus, and I was hooked. Now, I pretty much can’t get enough of it.
A few weeks ago at the farmer’s market, I discovered a booth where a sweet, older couple was selling homemade hummus. They had tons of different flavors, and even better, they had samples of each. {Yay for free food!} I tried their cilantro-lime flavor and practically swooned. It was so insanely good that I decided to try and figure out how to make it myself.
I’m not sure it’s 100% as good as the farmer’s market variety, but it’s pretty darn close, and it’s still delicious.
I used this recipe as a starting point and changed/added things as I went.
Cilantro-Lime Hummus
Ingredients
- 1/4 cup tahini {sesame paste}
- Juice of 1-2 limes
- 1-2 garlic cloves minced
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 2 10.5- oz cans garbanzo beans {also called chickpeas - I used Goya brand} drained and rinsed
- 3/4 teaspoon ground cumin
- 2-3 tablespoons water
- 4 tablespoons chopped fresh cilantro
Instructions
- 1. Combine lime juice and tahini in the bowl of a food processor. Process for approx. 1 minute. Scrape down sides of bowl, then process for another minute, or until tahini becomes thicker and lighter in color.
- 2. Add olive oil, garlic, cumin and salt and process for 30 seconds to a minute.
- 3. Add half of the garbanzo beans and process for 1 minute. Add remaining garbanzo beans and process for an additional 2 minutes or until thick and smooth. If hummus is too thick, slowly add in water while food processor is running until it gets to the desired consistency.
- 4. Once desired consistency is reached, add in cilantro and process for an additional 30-45 seconds.
