I have been on a bit of a blondie kick lately. As we’ve already established, I am one of the laziest people ever, so whenever I can find a quicker and/or easier way to do something, I am all over it.
Case in point: chocolate chip cookies. Love them, but while they’re easy to make, there is a bit of a time commitment to them. You have to mix the dough, then scoop it out onto a bunch of different baking sheets, and unless you have a ginormous oven {which I do not}, you will need to do a couple of baking sheets at a time, which can easily lead to this whole process taking an hour or more.
With chocolate chip blondies, on the other hand, all you have to do is toss everything in a bowl, mix it, slap it into a pan and put that bad boy in the oven. In less than 30 minutes start to finish, and with barely any effort on your part, you’ve got yourself a delicious dessert.
This particular recipe for cinnamon chocolate chip blondies was inspired by American Heritage Chocolate Bites. We are huge suckers for marketing and packaging in this house, so when I saw these little individually wrapped chocolates in their little muslin bag, I just about died.
I mean, seriously.
Then I read more about them and found out that the coolness goes well beyond the packaging. All American Heritage Chocolates are made from a recipe from 1750 and are made with only those ingredients that were available in the 18th century, including cinnamon, nutmeg, vanilla, orange and red pepper. They’re a little bit sweet and a little bit spicy, and really, really delicious. And for a limited time, American Heritage Chocolates are available at your local Cracker Barrel Old Country Store. {Aside: I could spend days in a Cracker Barrel store. I love how they have such fun old-school toys and treats. And don’t even get me started on their fun kitchen stuff. Seriously. DAYS.}
Anyway, naturally I wanted to make something with these fun little chocolate bites, and due to my recent obsession, my mind immediately went to blondies. Since this chocolate is so special and unique, I decided to jazz them up a little bit with some cinnamon.
The result was so very good. The cinnamon gives the blondies a little extra kick and works so well with the spice in the chocolate. They end up being a perfect grown-up treat {even though my kids loved them too!}.
Cinnamon Chocolate Chip Blondies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 - 1 tsp cinnamon
- 1 1/2 cups lightly packed brown sugar
- 5 Tbsp butter melted
- 2 eggs
- 2 tsp vanilla bean paste {or vanilla extract}
- 1 cup chopped American Heritage Chocolate
Instructions
- 1. Preheat oven to 350 degrees and lightly grease a 9" x 13" baking pan. In a medium bowl, mix together flour, baking soda, salt and cinnamon. Set aside.
- 2. In a large bowl, beat the brown sugar, butter, eggs and vanilla until blended. Slowly add the dry ingredients into the brown sugar mixture and beat until combined. Stir in chocolate. Spread into prepared pan.
- 3. Bake for 18-20 minutes or until toothpick inserted near the center comes out clean. Cool in pan. When cool, cut into bars.
