Ok, show of hands: How many of you would eat {or have eaten} an entire batch of chocolate chip cookie dough?
That’s what I thought.
There’s aren’t very many people who don’t love chocolate chip cookie dough. But a lot of people are concerned about the raw eggs in the dough. I really do get what the problem is, but I can tell you I have been eating raw cookie dough my entire life and have never once gotten sick from it. {Unless you count just feeling like I’m going to yarf because I ate a boatload of raw cookie dough. But that’s not what we’re talking about here.}
Regardless, sometimes you just need some raw cookie dough. Whether it’s to mix into or put on top of ice cream, dip in chocolate for truffles or cookie dough bites, or just to eat with a spoon {or for a special recipe I’ll be featuring tomorrow! I found a few different recipes online, but none of them were perfect for me, so I tweaked them until I came up with one that I loved. It also comes with a stamp of “highly recommended” from all 3 of my boys, which is something to be proud of.
Eggless Chocolate Chip Cookie Dough
Ingredients
- 1 stick butter softened
- 3/4 cup brown sugar
- 1 tsp vanilla bean paste {or vanilla extract}
- 1/8 tsp salt
- 1 1/2 cups all-purpose flour
- 1-2 Tbsp milk
- 1/2 cup mini chocolate chips
Instructions
- 1. Cream together butter and brown sugar. Add in vanilla bean paste and mix thoroughly.
- 2. In small bowl, mix together salt and flour. Gradually add dry ingredients into butter mixture and mix until fully incorporated and dough is crumbly.
- 3. Add in milk, a tablespoon at a time, until the dough reaches the desired consistency. Stir in chocolate chips.
