Ok, so I am trying not to have a full-blown panic attack that Christmas is a little over a week away. I am not done shopping, I haven’t finished decorating my house, and I’ve barely even begun baking all my Christmas cookies.
But my friend Julie from White Lights on Wednesday is hosting her 3rd Annual Christmas Cookie Recipe Swap, and of course I had to participate.

If you remember, the recipe I was given last year was for Lemon Chewies. Not only did they turn out delicious, but they have become one of my most popular recipes on my blog! So I was super excited to do this again.
This year, I was paired up with Carli from Dimple Prints. Seriously, you need to stop what you’re doing {even though it’s reading my blog — just promise me you’ll come back} and go check out her blog. I can’t even begin to put into words how much I love it. There are so many amazing party ideas, you won’t believe it. {I mean, Grinch Drinks?!?! From a Grinch Birthday Party?!? I love the Grinch! My kids make me read them that book all year round, and I never get sick of it.}
Anyways, Carli sent me a recipe for Joan’s Mom’s Ginger Cookies {Joan was a long-time friend of Carli’s grandma, and this is her mom’s recipe. How cool is that??}, and let me tell you, they were fabulous.
They are sweet, and rich, and molasses-y, and they totally remind me of cookies that my grandma used to make when I was little. I am pretty sure these are going to end up in my yearly Christmas cookie rotation.
Joan's Mom's Ginger Cookies
Ingredients
- 2/3 c butter
- 1 c sugar {plus more for rolling cookies in}
- 1 egg
- 4 T molasses
- 2 c flour
- 1/2 t ginger
- 1/2 t cinnamon
- 1/2 t ground cloves
- 2 t baking soda
- 1/2 t salt
Instructions
- 1. Preheat oven to 350 degrees and line several baking sheets with parchment paper.
- 2. Cream together butter and sugar until light and fluffy. Add egg and molasses and blend thoroughly.
- 3. In a medium bowl, sift together flour, ginger, cinnamon, cloves, baking soda and salt. Gradually add to wet ingredients until just blended. Chill dough for approximately 30 minutes.
- 4. Once chilled, form dough into small balls and roll in sugar. Place on parchment-lined baking sheet and flatten slightly with a fork. Bake for 8-10 minutes for softer cookies; slightly longer for crispy cookies.
