A couple of summers ago, I discovered a recipe for No-Bake Lemon Cloud Pie, and it became my go-to summer dessert. It’s so light and fluffy and delicious, and lemon desserts always make me think of warm weather, so it was just perfect.
I wanted to try to do a little spin on this dessert, and I have had push pop containers sitting in my cupboard for probably about a year now, so I decided to go nuts and finally use them.
I got my containers from Pick Your Plum, and I’ve seen them on there since, but if you don’t happen to find them there, they’re starting to be a lot more readily available. You can order them on Amazon, and they also have them at Michael’s and Hobby Lobby.
My kids love push pops, and if we’re being honest here, so do I. They remind me of Orange Push-Ups from when I was little, and those were my absolute favorite.
These are quick and easy to make, but they do require some advance planning. They’re basically an icebox cake, so the cookies need some time to soften up.
Just make your lemon filling, and try really hard not to eat all of it before you fill your containers. It’s hard, but just try. Spoon all your filling into a large piping bag or gallon-size zip-top bag and snip off a small corner. {Tip: put your bag in a pitcher or large vase — it makes it a bajillion times easier to fill it up!}
Place a Nilla wafer in the bottom of your container and squeeze a dollop of lemon filling on top. Continue layering cookies and filling until you fill up your container, making sure to finish with a dollop of the lemon filling on top. If you want to be super fancy, top off the whole shebang with some lemon zest.
Chill all of the containers for at least 6 hours, but preferably overnight, to ensure that the cookies completely soften up.
Try not to eat 10 of them, but if you do, is it really that big of a deal? I mean, it’s lemon, which is a fruit, and fruit is good for you, so actually, this is a completely healthy dessert. Maybe. Whatever, that’s what I tell myself.
Lemon Cloud Push Pops
Ingredients
- 1 can 14 oz. sweetened condensed milk
- 1/2 cup about 3 medium lemons fresh lemon juice
- 1 teaspoon grated lemon zest
- 2 cups frozen whipped topping thawed
- 1 box Nilla wafer cookies
- 12 push-pop containers
Instructions
- 1. In a medium bowl, beat sweetened condensed milk, lemon juice and zest combined. Fold in whipped topping. Spoon filing into a large piping bag or gallon-size zip-top bag, and snip off a small corner.
- 2. Place a Nilla wafer in the bottom of a push-pop container and squeeze a dollop of lemon filling on top. Continue layering cookies and filling until you fill up your container, making sure to finish with a dollop of the lemon filling on top.
- 3. Chill all of the containers for at least 6 hours, but preferably overnight.
