We are big ol’ fans of snacks and appetizers in this house. One of the boys’ favorite treats is to do a “snacky dinner” where we go tapas-style and just have a whole bunch of appetizers rather than an entree. And of course, because I’m me, I always try to find shortcuts everywhere I possibly can. Like with these loadedbaked potato nacho fries I just created — they’re super easy to make, because they use frozen Alexia fries and onion rings.
David has now requested these for every snacky dinner from here until the end of time.
They are so crazy good.
We love Alexia products, and pretty much always have them in the freezer. I think they cook up crispier and more delicious than most other frozen fries, and I like that they’re made with all natural ingredients. Our favorites are the Sweet Potato Fries with Sea Salt, and the two I used for this recipe: the Smart Classics Crinkle Cut Fries and the Crispy Onion Rings.
I found them in the frozen section at Walmart the last time I was there. {Side note: I know I say this all the time, but I love shopping for groceries at Walmart. It’s so easy to get everything all at once! That is all.}
For this recipe, I decided to start with the crinkle cut fries and fancy ’em up a little bit. I consulted my boys {a.k.a. my sous chefs}, and we decided we should try to make kind-of nachos, but with fries instead of chips, and baked potato toppings instead of your normal nacho toppings.
In other words, loaded baked potato nacho fries.
They are super easy to make, of course. Just bake the fries and onion rings according to the package directions {or a little longer, like I usually do, to make them extra-crispy). Put the fries on a plate, and cover them with your favorite baked potato toppings! We used shredded cheddar, ranch dressing, bacon and green onions, and then chopped up the onion rings and threw those on there as well. Because, why not?
The 5 of us housed these in about 2 minutes flat. So, so delicious.
Loaded Baked Potato Nacho Fries
Ingredients
- 16 oz Alexia Smart Classics Crinkle Cut Fries
- 8-10 Alexia Crispy Onion Rings
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 5-6 strips bacon cooked, cooled & crumbled
- 4 green onions thinly sliced
Instructions
- 1. Preheat oven to 425 degrees F. Cook fries and onion rings for 20-22 minutes, stirring halfway through cooking time. Chop onion rings into small pieces and set aside.
- 2. Place fries on an oven-safe plate and top with shredded cheddar. Broil for 1-2 minutes, or until cheese is melted. Drizzle with ranch dressing and top with bacon, green onions and chopped onion rings. Serve immediately.
