Ok, people. I am about to blow your mind. Because today I am making No-Bake S’mores Cookie Dough Bars.
I really think this might be my favorite dessert ever. It has become my go-to when I need a quick and easy dessert. They’re pretty much perfect.
This recipe was actually in the September 2015 Food Network Magazine, in a pull-out called 50 Bar Cookies. {For reals. 50 of them. Ridiculous.} I made a couple of small changes, like upping the vanilla and cutting back on the brown sugar, but aside from that, I left the recipe as-is.
The consistency of these bars is incredible. It’s almost like a combination between fudge and cookie dough. They’re sweet but not too sweet, and absolutely, totally addicting.
Even better, they are pretty much the easiest thing ever. And you can make them ahead and just keep them in the fridge, so they’re ready when you are.
I’ve never made them and not had people go nuts over them. They are pretty much guaranteed to be a hit wherever you share them.
- 1 stick butter, softened
- 1/2 c brown sugar
- 2 tsp vanilla bean paste {or vanilla extract}
- 2 c graham cracker crumbs
- 1 c flour
- 14 oz sweetened condensed milk
- 1 c milk chocolate chips
- 1 c mini marshmallows
- 1. Line a 9" x 13" pan with foil, leaving a 2-inch overhang on two sides, and coat the foil with cooking spray.
- 2. Beat butter, brown sugar and vanilla until fluffy. Add in graham cracker crumbs and flour and beat until combined. Beat in condensed milk, and then stir in chocolate chips and marshmallows. Press mixture into prepared pan and chill 1-2 hours, or until set. Cut into bars.
