I love pie. I would rather have pie than cake most of the time. In fact, I had a few birthdays growing up when I requested apple pie from my mom rather than a cake. So it goes without saying that dessert is usually my favorite part of Thanksgiving. And while I do love me some apple pie, I think pumpkin is my favorite.
But here’s a secret about me: I cannot make a pie crust to save my life. I don’t know what it is — I follow the recipe, and use all the tricks everyone says to do, but every time I try to make a pie crust from scratch, it is horrendous. It either has no flavor whatsoever, or it falls apart, or it’s gummy. Blech. So I usually resort to using {*gasp!!*} store-bought pie crusts.
But the other day, I was at Walmart getting some groceries and I saw these Mrs. Smith’s frozen pumpkin pies, and I decided to give them a shot.
I’m not going to lie to you: it was amazing. Who knew that a frozen pie could taste so good?!? And what could be easier than just pulling a pie out of the freezer and popping it in the oven?? No mixing, no swearing at an uncooperative crust, no mess.
But because I’m me, I couldn’t just leave well enough alone. I had to take that pie one step further and make some pumpkin pie parfait push pops. {Today’s post is apparently brought to you by the letter “P”.}
There’s just something about push pop containers. It doesn’t matter what you put in them, it automatically makes it more fun. {Remember my Lemon Cloud Push Pops?} Plus, you can take them with you — and who doesn’t love portable pie?!? I mean, seriously.
I started by just baking the Mrs. Smith’s pumpkin pie according to the directions on the package. It automatically made my whole house smell like Thanksgiving, it was awesome.
Once it was baked and completely cooled, I scooped out all of the filling and placed it in a large bowl. I added in 1/2 cup of Cool Whip and folded it all together until the pie filling was nice and light and airy.
I popped that filling into a gallon-sized zip-top bag, snipped off the corner and started filling my push pop containers. {You can get push-pop containers at Michael’s, Hobby Lobby, and other craft stores, and I’ve even seen ones at some grocery stores.}
I did a layer of the pumpkin pie filling, and then a layer of some pieces of crust. {That Mrs. Smith can bake me under a table when it comes to crust. It’s not fair.} Then a layer of Cool Whip — because what’s a pie without Cool Whip?? — another layer of crust, another layer of pumpkin pie filling, and a dollop of Cool Whip on top.
So fun, and so easy. I actually baked my pie a few days before I assembled the push pops, so the actual assembly only took about 15 minutes. Not bad for a Thanksgiving dessert!
Pumpkin Pie Parfait Push Pops
Ingredients
- 1 Mrs. Smith's Pumpkin Pie
- 8 oz. Cool Whip
Instructions
- 1. Bake pie according to package directions and cool completely.
- 2. Scoop pumpkin pie filling into large bowl. Fold in 1/2 cup Cool Whip until thoroughly combined. Spoon into piping bag or large zip-top bag, and snip off a corner.
