I’m trying to lose a few pounds, get in shape and eat healthier — I just signed up for a half marathon in September! Gaah!! — so I’ve been keeping my eye out at the grocery store for healthier versions of items we use every day, like butter.
The other day, I spotted this Brummel & Brown spread that’s made with nonfat yogurt.
I thought, hey, I might as well give it a shot. It has 50% less fat and calories than butter and no cholesterol, trans fat or hydrogenated oils. All lovely things.
So I grabbed a tub and decided to try it out. I will be honest, I was a little leery of it at first, because some of the spreads out there really just aren’t that tasty.
But I really couldn’t believe how good this was. Even my husband, who is a huge butter snob person, said that he would have thought he was eating spreadable butter when he tried this spread. That’s a huge compliment from him, trust me.
I was having some toast for breakfast the other day, and I thought: this would be so good with vanilla butter. So I decided to try to make some. Because that’s how I roll.
So I just mixed some softened Brummel & Brown spread with some vanilla bean paste. That’s it. Boom, you’ve got yourself some vanilla bean spread.
This stuff is crazy good, people. CRA-ZAY good.
The Brummel and Brown spread is so velvety smooth, creamy and spreadable, which makes it perfect for toast, bagels or croissants. Because I don’t know about you, but I get so annoyed when I’m trying to put cold butter on my toast and it just ends up mangling the bread. Irritating.
And once you add in the vanilla bean paste, it’s heavenly. {Note: you can find vanilla bean paste in most grocery stores, right near the vanilla extracts — and I’ve gotten it at Michael’s before too — but if you can’t find it, you could always use the seeds from inside a vanilla bean instead. I don’t know that I’d recommend vanilla extract, because it may water down the spread.}
Look at all those beautiful little flecks of vanilla in there! Little tiny dots of heaven, if you ask me.
Vanilla Bean Spread
Ingredients
- 1 cup Brummel & Brown spread softened
- 1 1/2 tsp vanilla bean paste
Instructions
- 1. Add vanilla bean paste to softened spread and mix thoroughly.
