Spicy Spitfire Shrimp – 21 Day Fix Approved

I am bringing you something a little different today: something healthy! 

These spicy shrimp are so delicious and easy to make -- and they're super healthy, too! And as a bonus, they work for the 21 Day Fix!

I know, it’s shocking. You all know how much I love my chips and dip, cookie doughice cream, and other various sweet treats, but I clearly need a change in this almost-40-year-old body. 

This winter made me so ridiculously lazy and hungry — I hardly worked out at all, and I can’t even think about what I was eating, because I will embarrass myself. 

So when I saw a friend, who happens to be a Beachbody coach, post something on Facebook about joining her challenge group for the 21 Day Fix. I checked it out and thought, you know what? It’s only $60 and it’s only 21 days. I can do that. {And actually, we’re taking David to New York for his 10th birthday the first weekend in May and I plan to eat my way though the city, so in my case, it’s only a 17 day fix.}

So I ordered it, and the package came, and I saw the sizes of the containers you use for portion control, and thought: “Oh great, I’m going to starve.” But then I started it, and for the first two day, I actually couldn’t even eat all the food you’re supposed to!

I’m on Day 4 now, and I feel great. Well, other than the fact that I can’t move because I’m so $#%^@#^ing sore, I feel great. I’m eating healthier than I have in… well… ever, and I’m working out at home and enjoying the workouts. {Mostly. I have said some rather nasty words to Autumn during the workouts. She can be a beyotch.}

But I am having all kinds of fun finding new recipes to try that are approved by the program. Last night I made chicken enchiladas that were so good, Dave and the boys loved them too, and Dave said we need to add it to our rotation of regular dinners, even when I’m not doing the fix. Delicious.

For lunch yesterday, I made a 21 Day Fix-approved version of one of my favorite Rachael Ray recipes, Spitfire Shrimp. I love shrimp so much, and while her version is pretty healthy as-is, there are a few things {such as the butter and olive oil} that make it not-so-great.

I served it on a bed of mixed greens and drizzled the remaining seasoning over the top. It was so good. Super duper spicy, but so very good.

While I promise whole heartedly not to turn Endlessly Inspired into a fitness blog, I will be sharing my progress throughout the next couple of weeks. Because I know most of us probably have a few pounds we wouldn’t mind getting rid of, and I know I love hearing about how other people lost weight and got in shape. 

Spitfire Shrimp - 21 Day Fix Approved
Yields 1
An easy-to-make, spicy shrimp dish that is perfect for snacking or even a complete lunch or dinner. And, it's 21 Day Fix approved!

For the seasoning
  1. Juice from 1/2 lime
  2. 1 1/2 Tbsp hot sauce
  3. 1/2 Tbsp ground cumin
  4. 1/2 Tbsp Old Bay seasoning
For the shrimp
  1. 1 tsp extra virgin olive oil
  2. 1 tsp minced garlic
  3. 6-8 large shrimp {see notes}
  4. 1 cup mixed greens
  5. 1 scallion, sliced thinly
Instructions
  1. 1. Heat olive oil in a small nonstick skillet over medium-high heat.
  2. 2. In a medium bowl, mix together lime juice, hot sauce, cumin, and Old Bay.
  3. 3. Saute garlic for about 1 minute, then add shrimp and cook for approximately 3 minutes, turning about halfway through, until opaque and pink. Immediately dump shrimp into seasoning blend and toss to thoroughly coat. Serve over mixed greens and garnish with scallion.
Notes
  1. If you are doing the 21 Day Fix, use your red container to decide how many shrimp to use. I used enough to be 1 1/2 containers.
  2. 21 Day Fix count: On their own, the shrimp are 1 1/2 red and 1 teaspoon. Mixed greens would add 1 green.
