Spitfire Shrimp - 21 Day Fix Approved
An easy-to-make, spicy shrimp dish that is perfect for snacking or even a complete lunch or dinner. And, it's 21 Day Fix approved!

For the seasoning
- Juice from 1/2 lime
- 1 1/2 Tbsp hot sauce
- 1/2 Tbsp ground cumin
- 1/2 Tbsp Old Bay seasoning
For the shrimp
- 1 tsp extra virgin olive oil
- 1 tsp minced garlic
- 6-8 large shrimp {see notes}
- 1 cup mixed greens
- 1 scallion sliced thinly
1. Heat olive oil in a small nonstick skillet over medium-high heat.
2. In a medium bowl, mix together lime juice, hot sauce, cumin, and Old Bay.
3. Saute garlic for about 1 minute, then add shrimp and cook for approximately 3 minutes, turning about halfway through, until opaque and pink. Immediately dump shrimp into seasoning blend and toss to thoroughly coat. Serve over mixed greens and garnish with scallion.
If you are doing the 21 Day Fix, use your red container to decide how many shrimp to use. I used enough to be 1 1/2 containers.
21 Day Fix count: On their own, the shrimp are 1 1/2 red and 1 teaspoon. Mixed greens would add 1 green.
