I’ve mentioned before that I’m working on losing a few pounds and getting in better shape. I’ve been trying to eat healthier and drink more water.
Problem is, I love dessert. And while I also love fruit, a slice of watermelon isn’t going to cut it for dessert. And I refuse to eat anything I don’t like, because if I’m limiting my calorie intake, I’m going to make each and every bite of food count.
So I’ve been on the hunt for healthy desserts that don’t taste like they’re healthy.
And while it’s pretty much impossible to believe, this chocolate chip cookie pie fits the bill.
I mean, really. Can you believe that this is healthy?!? I promise you, it is. {When compared to other chocolate chip cookie pies. Not necessarily when compared to, say, quinoa.}
The reason it’s healthy is bananas. I mean, not actually bananas, I mean it’s crazy. You know what the secret ingredient is?
BEANS.
Seriously! BEANS!
What the wha…..?!?
I actually took this over to a friends’ house for dinner one night and didn’t tell anyone that it was healthy. Everyone raved about it, even my husband {although he knew about the beans}, and they were all shocked when I told them it wasn’t actually that bad for them. My kids told me it was good “even for non-healthy food”, which is a winning review in my book.
The key is to serve it warm. Then it’s all delicious and chocolatey and gooey and amazing.
I originally found this recipe on one of my favorite healthy-eating blogs, Chocolate Covered Katie. Her whole site is focused on healthy desserts, and even though her recipes are all vegan {and I am pretty much the exact polar opposite of a vegan}, every one I have tried is delicious. I have made this chocolate chip cookie pie a few times now, and I’ve made a few changes to her recipe, so I’ll share what I did here.
Secretly Healthy Chocolate Chip Cookie Pie
Ingredients
- 1 cup quick oats
- 2 cans white beans drained and rinsed
- 1/3 cup unsweetened applesauce
- 1-2 Tbsp water if needed
- 3 Tbsp coconut oil in liquid form
- 1 Tbsp vanilla bean paste {or pure vanilla extract}
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup brown sugar
- 1 cup chocolate chips
Instructions
- 1. Preheat oven to 350 degrees. Spray pie pan or springform pan with cooking spray, set aside.
- 2. In a food processor, blend quick oats until they form a fine powder. Transfer to a large bowl. Add beans and applesauce to food processor and blend until completely smooth, adding water 1 tsp at a time if necessary to achieve a smooth consistency. Add to large bowl with oat flour and mix thoroughly with an electric mixer.
- 3. Add in oil, vanilla bean paste, baking soda, baking powder, salt and brown sugar and mix well. Stir in chocolate chips. Pour into prepared pan and bake for 40-50 minutes, or until a knife inserted into the center of the pie comes out mostly clean. Let stand in pan for 10-15 minutes. Serve warm.
