Secretly Healthy Chocolate Chip Cookie Pie

This chocolate chip cookie pie is so amazingly delicious, you will never believe that it's actually relatively healthy!

Ingredients
  

  • 1 cup quick oats
  • 2 cans white beans drained and rinsed
  • 1/3 cup unsweetened applesauce
  • 1-2 Tbsp water if needed
  • 3 Tbsp coconut oil in liquid form
  • 1 Tbsp vanilla bean paste {or pure vanilla extract}
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1 cup chocolate chips

Instructions
 

  • 1. Preheat oven to 350 degrees. Spray pie pan or springform pan with cooking spray, set aside.
  • 2. In a food processor, blend quick oats until they form a fine powder. Transfer to a large bowl. Add beans and applesauce to food processor and blend until completely smooth, adding water 1 tsp at a time if necessary to achieve a smooth consistency. Add to large bowl with oat flour and mix thoroughly with an electric mixer.
  • 3. Add in oil, vanilla bean paste, baking soda, baking powder, salt and brown sugar and mix well. Stir in chocolate chips. Pour into prepared pan and bake for 40-50 minutes, or until a knife inserted into the center of the pie comes out mostly clean. Let stand in pan for 10-15 minutes. Serve warm.
