Secretly Healthy Chocolate Chip Cookie Pie
This chocolate chip cookie pie is so amazingly delicious, you will never believe that it's actually relatively healthy!
- 1 cup quick oats
- 2 cans white beans drained and rinsed
- 1/3 cup unsweetened applesauce
- 1-2 Tbsp water if needed
- 3 Tbsp coconut oil in liquid form
- 1 Tbsp vanilla bean paste {or pure vanilla extract}
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup brown sugar
- 1 cup chocolate chips
1. Preheat oven to 350 degrees. Spray pie pan or springform pan with cooking spray, set aside.
2. In a food processor, blend quick oats until they form a fine powder. Transfer to a large bowl. Add beans and applesauce to food processor and blend until completely smooth, adding water 1 tsp at a time if necessary to achieve a smooth consistency. Add to large bowl with oat flour and mix thoroughly with an electric mixer.
3. Add in oil, vanilla bean paste, baking soda, baking powder, salt and brown sugar and mix well. Stir in chocolate chips. Pour into prepared pan and bake for 40-50 minutes, or until a knife inserted into the center of the pie comes out mostly clean. Let stand in pan for 10-15 minutes. Serve warm.
