So here’s the thing about me. I am not a great cook. I can follow a recipe like anyone else, and I can make a mean casserole. But as for coming up with a new dish, all on my own… no. Just no. That’s my husband’s department. He’s the cook, I’m the baker.
But when I saw that the secret ingredient for this month’s Get Your Chef On challenge from Julie at White Lights on Wednesday and Jen at Four Marrs … One Venus was shrimp, I jumped on board.
Because I loves me some shrimps, y’all.
You can pretty much guarantee that when we go out to dinner, if there’s shrimp on the menu, I’m getting it.
When I was trying to figure out what I was going to make for this challenge, I first thought of doing something with coconut milk {because, I mean… it’s coconut milk}, but then I remembered I’m supposed to be doing Weight Watchers {stupid metabolism that isn’t like it was when I was 25…}. So my husband suggested that I do shrimp tacos. And I was all over that.
When we went to Grand Cayman a few years ago, there was this little tiny restaurant across the street from where we stayed, and they served the most amazing fish and shrimp tacos I’ve ever had. Why? Because they used sweet chili sauce on them.
If you haven’t ever tried sweet chili sauce, you need to get some. Like, now. I use it on everything I possibly can, but it’s especially delicious on seafood.
I also don’t think you should ever eat a seafood taco without some type of cabbage or slaw. So I set out to make a sweet chili slaw to go on top. And this one, if I do say so myself, is ridiculously good.
Recipes like this are also great if you love shrimp as much as I do. I could easily eat a pound of shrimp in one sitting, but that can get a little costly. If you put them into tacos and add slaw on top, you can stretch that pound-and-a-quarter to feed four people!
I made this in a cast iron grill pan on the stove, but it will be awesome when it finally gets warm again and we can cook the shrimp on the grill.

Grilled Shrimp Tacos with Sweet Chili Slaw
Ingredients
For the shrimp
- 1/4 tsp lime zest
- Juice of 1 lime
- 2-3 dashes hot sauce
- 1/2 tsp Goya Adobo seasoning
- 3/4 tsp ground cumin
- 1/2 tsp chile powder
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1 1/2 lbs medium shrimp shelled and deveined
- 8 flour tortillas
For the slaw
- 1/2 cup light mayonnaise
- Zest and juice of 1 lime
- 1 tsp rice vinegar
- 2 cloves garlic minced
- 1 tsp cumin
- 2 Tbsp sweet chili sauce
- 1 tsp white sugar
- 2-3 scallions thinly sliced
- 4 Tbsp chopped fresh cilantro
- 5 cups cole slaw mix or shredded cabbage
Instructions
- 1. In a large bowl, whisk together lime zest, lime juice, hot sauce, Adobo seasoning, cumin, chile powder, oregano and garlic. Add shrimp and toss to coat. Let marinade 10 minutes.
- 2. Meanwhile, whisk together mayonnaise, lime zest, lime juice and rice vinegar until well combined. Stir in garlic, cumin, sweet chili sauce and sugar. Add in scallions, cilantro and cole slaw mix and stir until well combined.
- 3. Once shrimp is done marinating, heat cast iron grill pan {or outdoor grill} on medium heat until hot. Grill shrimp until pink, about 1-2 minutes per side.
- 4. Serve shrimp on flour tortillas and top with slaw.
