Grilled Shrimp Tacos with Sweet Chili Slaw

Delicious grilled shrimp tacos with a sweet and slightly spicy slaw topping

Ingredients
  

For the shrimp

  • 1/4 tsp lime zest
  • Juice of 1 lime
  • 2-3 dashes hot sauce
  • 1/2 tsp Goya Adobo seasoning
  • 3/4 tsp ground cumin
  • 1/2 tsp chile powder
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1 1/2 lbs medium shrimp shelled and deveined
  • 8 flour tortillas

For the slaw

  • 1/2 cup light mayonnaise
  • Zest and juice of 1 lime
  • 1 tsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 2 Tbsp sweet chili sauce
  • 1 tsp white sugar
  • 2-3 scallions thinly sliced
  • 4 Tbsp chopped fresh cilantro
  • 5 cups cole slaw mix or shredded cabbage

Instructions
 

  • 1. In a large bowl, whisk together lime zest, lime juice, hot sauce, Adobo seasoning, cumin, chile powder, oregano and garlic. Add shrimp and toss to coat. Let marinade 10 minutes.
  • 2. Meanwhile, whisk together mayonnaise, lime zest, lime juice and rice vinegar until well combined. Stir in garlic, cumin, sweet chili sauce and sugar. Add in scallions, cilantro and cole slaw mix and stir until well combined.
  • 3. Once shrimp is done marinating, heat cast iron grill pan {or outdoor grill} on medium heat until hot. Grill shrimp until pink, about 1-2 minutes per side.
  • 4. Serve shrimp on flour tortillas and top with slaw.
