1. In a large bowl, whisk together lime zest, lime juice, hot sauce, Adobo seasoning, cumin, chile powder, oregano and garlic. Add shrimp and toss to coat. Let marinade 10 minutes.
2. Meanwhile, whisk together mayonnaise, lime zest, lime juice and rice vinegar until well combined. Stir in garlic, cumin, sweet chili sauce and sugar. Add in scallions, cilantro and cole slaw mix and stir until well combined.
3. Once shrimp is done marinating, heat cast iron grill pan {or outdoor grill} on medium heat until hot. Grill shrimp until pink, about 1-2 minutes per side.
4. Serve shrimp on flour tortillas and top with slaw.
