When I first decided to try to make Irish Car Bomb Rice Krispies Treats, I sorta thought it might make me seem like I have a bit of an alcohol problem.
I mean, who thinks of putting Bailey’s Irish Cream in a Rice Krispies Treat and then topping it with a Guinness glaze?
Me, apparently. And perhaps people who enjoy their liquor a bit too much.
But then I tried them. And they were phenomenal.
So if this makes me seem like I have a bit of an alcohol problem, then so be it. I don’t care. Because I am pretty sure I don’t, I just think it’s fun to eat things that have alcohol in them, that’s all. Jello shots? Yep. Pudding shooters? Sign me up.
Irish Car Bomb Rice Krispies Treats? Heck yes.
You seriously need to try these. What a fun treat for St. Patrick’s Day! {Or you know, like… Thursday.}

Irish Car Bomb Rice Krispies Treats
Ingredients
- 50 large marshmallows or 5 cups miniature marshmallows
- 3 Tbsp butter
- 1/3 cup Bailey's Irish Cream
- 6 cups Rice Krispies
- 1/2 cup Guinness
- 1/2 cup powdered sugar
Instructions
- 1. Spray a 9x13 inch pan with cooking spray.
- 2. Melt butter in saucepan over low heat. Add marshmallows and stir until melted. Remove from heat. Add Bailey's and stir until completely mixed.
- 3. Add Rice Krispies and stir until completely coated.
- 4. Press mixture into prepared pan and place in refrigerator until cool {about 20 minutes}.
- 5. Meanwhile, heat Guinness in small saucepan over medium heat until reduced by about half. Put powdered sugar into small bowl and add reduced Guinness, one tablespoon at a time, and whisk until fully combined and the consistency of maple syrup. {See note.}
- 6. Cut treats into squares and drizzle with glaze.

I am a huge Guinness and Bailey fan. I also tend to keep a bottle of Jamesons on hand. I am Irish, so I might be a bit biased. 😉 I can’t remember the last time I made rice krispy treats, but this might have to bring them out of hibernation!

I’ve tried this recipe multiple times now with the same exact results… really soggy treats… the flavors are there but the texture is way off.
First time I followed your measurements exactly, the next time I upped the marshmallows & Rice Krispies to compensate for the liquid going into the recipe and they came out less soggy but still not the gooey perfection of Rice Krispies Treats.
Any thoughts?

I found that if you freeze the Rice Krispy before putting drizzle on it the drizzle solidifies once it touches the treats and leaves the cereal itself super crispy.
