I know a lot of people are sick of the whole pumpkin craze, but I totally am not. I love pumpkin stuff, and I really wish it wasn’t just available in the fall. Although maybe if you could get pumpkin-flavored everything all year, it wouldn’t be as special. Who knows.
But regardless, I am full-on into pumpkin lovin’ right now, but I’m also trying to eat healthier {not that you’d be able to tell that from the recipes I usually share here, but really, I am}, so as much as I’d love to eat a whole pumpkin pie every day, that’s just not really going to work out well for anyone.
But a healthy pumpkin pie smoothie? That’s a whole different story, my friend.
This is so totally delicious, it’s ridiculous. You will never believe that it’s good for you.
But it is. There’s lots of protein in there thanks to a scoop of protein powder {I use Orgain Organic Plant Based Protein Powder in Sweet Vanilla Bean} and — wait for it — cottage cheese.
Really.
It sounds kind of nasty, and when I first saw a smoothie recipe with cottage cheese in it, I was all, “Um, no.”
But then I tried it, and I was shocked at how delicious it was. The trick is to blend the smoothie for a long time. Like, 3-5 minutes long. It will make sure all the cottage cheese gets blended up and creates a nice, smooth, thick shake.
The shake gets its pumpkin pie flavor from canned pumpkin {duh}, almond milk, vanilla bean paste, vanilla pudding mix and pumpkin pie spice.
It really tastes like you’re eating a big ol’ piece of pumpkin pie. But without all the guilt.
Pumpkin Pie Smoothie
Ingredients
- 1 cup pumpkin puree
- 1 cup unsweetened almond milk
- 1 tsp pumpkin pie spice
- 1 tsp vanilla bean paste or vanilla extract
- 1/2 cup low-fat cottage cheese
- 1 scoop vanilla protein powder I use Orgain Organic Plant Based Protein Powder in Sweet Vanilla Bean
- 1 tsp fat-free sugar-free vanilla pudding mix
- 1/4 cup ice cubes
Instructions
- 1. Place all ingredients in blender and blend for 3-5 minutes. Divide into 2 glasses and serve immediately.
