Aloha Chex Mix

A delicious snack mix that incorporates all the flavors of the islands
- 9 cups Chex cereal {I used a combination of Corn and Rice but you could use whatever you like}
- 1 1/4 cups vanilla baking chips
- 1/4 cup butter
- 2 cups powdered sugar
- 1 1/2 cups coconut
- 6.5 oz jar macadamia nuts chopped
- 6 oz bag dried pineapple chunks chopped {I used Sunsweet}
1. Measure cereal into a large bowl, set aside.
2. In microwaveable bowl or measuring cup, microwave chips and butter uncovered on high for 1 minute and stir. Microwave about 30 seconds more or until mixture can be stirred smooth. Pour mixture over cereal and stir until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar and coconut to bag. Seal bag; gently shake until well coated. Add macadamia nuts and pineapple chunks, shake to mix. Spread on waxed paper or foil to cool.
