Chocolate Heart Cap'n Crunch Cream Cheese Cookies

A soft, delicious cookie with bit of Cap'n Crunch cereal throughout, topped off with a chocolate heart.

- 1/2 c {1 stick} unsalted butter softened
- 3 oz. cream cheese softened
- 1 c powdered sugar
- 1/2 tsp baking powder
- 1 egg
- 1 tsp vanilla bean paste {or vanilla extract}
- 1 1/2 c flour
- 1 1/2 c Cap'n Crunch cereal
- approximately 24 chocolate hearts unwrapped
1. Preheat oven to 375 degrees. Place Cap'n Crunch is blender or food processor and process until fine. Set aside.
2. Cream together butter and cream cheese. Add powdered sugar and baking powder, and mix until thoroughly combined. Add egg and vanilla bean paste and beat until fluffy.
3. Gradually add in flour until thoroughly combined. Mix in Cap'n Crunch cereal crumbs. Cover and chill in refrigerator for 30 minutes.
4. Use small cookie scoop or drop by rounded tablespoonfuls onto baking sheet lined with parchment paper. Bake for 9-11 minutes. Remove from oven and let cool for 1 minute on baking sheet, then press one chocolate heart into the top of each cookie. Move cookies to wire cooling rack and let cool completely.
