Chocolate Heart Cap'n Crunch Cream Cheese Cookies

A soft, delicious cookie with bit of Cap'n Crunch cereal throughout, topped off with a chocolate heart.

Ingredients
  

  • 1/2 c {1 stick} unsalted butter softened
  • 3 oz. cream cheese softened
  • 1 c powdered sugar
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tsp vanilla bean paste {or vanilla extract}
  • 1 1/2 c flour
  • 1 1/2 c Cap'n Crunch cereal
  • approximately 24 chocolate hearts unwrapped

Instructions
 

  • 1. Preheat oven to 375 degrees. Place Cap'n Crunch is blender or food processor and process until fine. Set aside.
  • 2. Cream together butter and cream cheese. Add powdered sugar and baking powder, and mix until thoroughly combined. Add egg and vanilla bean paste and beat until fluffy.
  • 3. Gradually add in flour until thoroughly combined. Mix in Cap'n Crunch cereal crumbs. Cover and chill in refrigerator for 30 minutes.
  • 4. Use small cookie scoop or drop by rounded tablespoonfuls onto baking sheet lined with parchment paper. Bake for 9-11 minutes. Remove from oven and let cool for 1 minute on baking sheet, then press one chocolate heart into the top of each cookie. Move cookies to wire cooling rack and let cool completely.
