Grilled Bacon Chipotle Wings with Cilantro Ranch Dipping Sauce

A slightly spicy grilled chipotle wing with a creamy cilantro ranch dipping sauce.

Ingredients
  

For the barbecue sauce

  • 3 slices center cut bacon chopped
  • 1 clove garlic smashed
  • 1 T chipotle powder
  • 1 T dried minced onion
  • 1 t dried mustard
  • 1/4 cup brown sugar
  • 2 T apple cider vinegar
  • 1 T white sugar
  • 1/2 c water
  • 1 T worcestershire sauce
  • 2 c ketchup

For the Ranch

  • 1/2 c sour cream
  • 1 cup mayo
  • 1/4 c chopped cilantro
  • 1/4 c chopped parsley
  • Dash of cayenne
  • 2 T fresh chives chopped
  • 1/4 buttermilk
  • salt and pepper to taste

For the wings

  • 1 bag Tyson Grillin' Wings

Instructions
 

For the Bacon Chipotle Barbecue Sauce

  • 1. Place bacon in a medium saucepan over medium heat. Cook bacon until crispy. Remove bacon from pan and reserve.
  • 2. In the same pan, add smashed garlic clove and cook in bacon grease for approximately 2 minutes or until golden brown, stirring constantly to ensure garlic doesn't burn. Remove garlic from pan and discard. Add chipotle powder, minced onion and dried mustard and cook over low heat for 3-4 minutes to bloom the spices.
  • 3. Add brown sugar, apple cider vinegar, sugar, water, worcestershire sauce and ketchup. Stir until thoroughly combined, and reduce heat to low. Cover and cook for 1.5 - 2 hours, stirring occasionally. Add crumbled bacon back in for last 15 minutes of cooking time.

For the Cilantro Ranch

  • 1. Combine all ingredients except buttermilk, salt and pepper in a small bowl and mix thoroughly. Add buttermilk as necessary to thin out sauce to desired consistency. Refrigerate for at least 2 hours to allow flavors to combine. Stir and taste before serving, adding salt and pepper to taste.

For the wings

  • 1. Grill wings according to package directions.
  • 2. Toss in Bacon Chipotle Barbecue Sauce and place back on grill for another two minutes. Serve with Cilantro Ranch Dipping Sauce.
