1. Place bacon in a medium saucepan over medium heat. Cook bacon until crispy. Remove bacon from pan and reserve.
2. In the same pan, add smashed garlic clove and cook in bacon grease for approximately 2 minutes or until golden brown, stirring constantly to ensure garlic doesn't burn. Remove garlic from pan and discard. Add chipotle powder, minced onion and dried mustard and cook over low heat for 3-4 minutes to bloom the spices.
3. Add brown sugar, apple cider vinegar, sugar, water, worcestershire sauce and ketchup. Stir until thoroughly combined, and reduce heat to low. Cover and cook for 1.5 - 2 hours, stirring occasionally. Add crumbled bacon back in for last 15 minutes of cooking time.
