Joan's Mom's Ginger Cookies
A sweet, gingery molasses cookie that is perfect for the holidays!

- 2/3 c butter
- 1 c sugar {plus more for rolling cookies in}
- 1 egg
- 4 T molasses
- 2 c flour
- 1/2 t ginger
- 1/2 t cinnamon
- 1/2 t ground cloves
- 2 t baking soda
- 1/2 t salt
1. Preheat oven to 350 degrees and line several baking sheets with parchment paper.
2. Cream together butter and sugar until light and fluffy. Add egg and molasses and blend thoroughly.
3. In a medium bowl, sift together flour, ginger, cinnamon, cloves, baking soda and salt. Gradually add to wet ingredients until just blended. Chill dough for approximately 30 minutes.
4. Once chilled, form dough into small balls and roll in sugar. Place on parchment-lined baking sheet and flatten slightly with a fork. Bake for 8-10 minutes for softer cookies; slightly longer for crispy cookies.
