Joan's Mom's Ginger Cookies

A sweet, gingery molasses cookie that is perfect for the holidays!

Ingredients
  

  • 2/3 c butter
  • 1 c sugar {plus more for rolling cookies in}
  • 1 egg
  • 4 T molasses
  • 2 c flour
  • 1/2 t ginger
  • 1/2 t cinnamon
  • 1/2 t ground cloves
  • 2 t baking soda
  • 1/2 t salt

Instructions
 

  • 1. Preheat oven to 350 degrees and line several baking sheets with parchment paper.
  • 2. Cream together butter and sugar until light and fluffy. Add egg and molasses and blend thoroughly.
  • 3. In a medium bowl, sift together flour, ginger, cinnamon, cloves, baking soda and salt. Gradually add to wet ingredients until just blended. Chill dough for approximately 30 minutes.
  • 4. Once chilled, form dough into small balls and roll in sugar. Place on parchment-lined baking sheet and flatten slightly with a fork. Bake for 8-10 minutes for softer cookies; slightly longer for crispy cookies.
